Savory Omelette Recipe

Serves 2


  • 1 tsp margarine
  • 8 oz egg beaters, thawed
  • 1/4 cup sliced zucchini
  • 1/4 cup sliced mushrooms
  • 2 tbsp chopped onions
  • 2 tbsp chopped green peppers
  • 1/2 cup low sodium tomato sauce
  • 1/8 tsp ground red pepper
  • 1 tsp margarine
  • 1/2 cup diced, cooked turkey
  • 1/4 cup chopped green pepper
  • 2 tbsp chopped onion
  • 1 tsp margarine


1. In an 8-inch skillet, over medium heat, melt margarine.
2. Pour egg beaters into skillet.
3. Cook, lifting edges to allow uncooked ortion to run underneath.
4. When almost set, spoon desired filling onto half the egg.
5. Fold other half over the top.
6. Slide onto a warm plate.
7. Serve immediately.
8. For fillings: Cook ingredients in margarine until vegetables are tender.
