Reuben Omelet RecipeServes 2 Ingredients:Instructions:1. Bring small saucepan of water to boiling.2. Add sauerkraut. 3. Remove from heat; let stand for 10 minutes. 4. Drain. 5. Beat eggs, egg whites, water, salt and pepper in a bowl until blended. 6. Heat 10-inch nonstick skillet over medium heat. 7. Add 1/2 tablespoon butter, half the onion and half the egg mixture. 8. Cook for 5 seconds, swirling pan. 9. Lift up edges of egg mixture with spatula, letting uncooked egg run under. 10. Cook until egg is set on top, 1 to 2 minutes. 11. Sprinkle half of the cheese, sauerkraut and beef down omelette center; fold over. 12. Remove to plate. 13. Make second omelette with remaining ingredients. |
