Reuben Omelet Recipe

Serves 2

Ingredients:

  • 1/2 cup sauerkraut
  • 2 large eggs or egg substitute
  • 3 large egg whites
  • 1 tbsp water
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 tbsp unsalted butter
  • 2 stalks green onions, chopped
  • 1/4 cup Swiss cheese, shredded
  • 2 oz corned beef, lean, chopped


  • Instructions:

    1. Bring small saucepan of water to boiling.
    2. Add sauerkraut.
    3. Remove from heat; let stand for 10 minutes.
    4. Drain.
    5. Beat eggs, egg whites, water, salt and pepper in a bowl until blended.
    6. Heat 10-inch nonstick skillet over medium heat.
    7. Add 1/2 tablespoon butter, half the onion and half the egg mixture.
    8. Cook for 5 seconds, swirling pan.
    9. Lift up edges of egg mixture with spatula, letting uncooked egg run under.
    10. Cook until egg is set on top, 1 to 2 minutes.
    11. Sprinkle half of the cheese, sauerkraut and beef down omelette center; fold over.
    12. Remove to plate.
    13. Make second omelette with remaining ingredients.
