Bake in 350 F oven for 22 to 25 minutes or until a knife inserted near the center comes out clean. 6. Meanwhile, for sauce combine undrained tomatoes, zucchini, and 1/8 tsp pepper. 7. Put in saucepan, bring to a boil; reduce heat. 8. Cover and simmer about for 5 minutes or until zucchini is tender. 9. Simmer, uncovered, for 10 to 12 minutes more or to desired consistency. 10. To serve, cut omelet into quarters; top with sauce. |
