Puffy Omelette Squares Recipe
Serves 4 Ingredients: 6 egg yolks
6 egg whites
1/4 tsp salt
1/2 medium zucchini
1/8 tsp pepper
Instructions: 1. Spray an 8 x 8 x 2-inch baking dish with Pam, set aside.
2. For omelette, beat egg yolks, onion powder, salt, and 1/8 tsp pepper for about 4 minutes or until thick and lemon colored; set aside.
3. Beat egg whites until soft peaks form (tips fall over); fold into egg yolks.
4. Spread egg mixture evenly into prepared dish.
5. Bake in 350 F oven for 22 to 25 minutes or until a knife inserted near the center comes out clean.
6. Meanwhile, for sauce combine undrained tomatoes, zucchini, and 1/8 tsp pepper.
7. Put in saucepan, bring to a boil; reduce heat.
8. Cover and simmer about for 5 minutes or until zucchini is tender.
9. Simmer, uncovered, for 10 to 12 minutes more or to desired consistency.
10. To serve, cut omelet into quarters; top with sauce.
