Mountain High Herb Baked Eggs Recipe

Serves 4

Ingredients:

  • 1/4 lb ham, flaked
  • 8 large eggs, fresh
  • 2 tsp dijon mustard
  • 1/2 cup sour cream
  • 2 tsp fresh chives, chopped
  • 2 tsp fresh parsley, chopped
  • 3/4 cup shredded sharp Cheddar, cheese


Instructions:

1. Preheat oven to 375 degrees.
2. Grease 4 1-cup ramekins.
3. Divide flaked ham between ramekins.
4. Whisk together eggs, mustard and sour cream.
5. Stir in herbs and top with shredded cheese.
6. Bake 25 to 30 minutes until golden and set.
