Mexicalli Omelet Recipe

Serves 3


  • 1/3 cup Heinz 'n Onions
  • 2 tbsp drained chopped green
  • Chilies
  • 6 eggs
  • 2 tbsp water
  • 1/4 tsp salt
  • Dash pepper
  • 2 tbsp butter or margarine


1. Combine ketchup and chilies; set aside in small bowl.
2. Beat eggs, water, salt and pepper with a fork to blend well.
3. Heat butter in a 10" skillet until sizzling and lightly browned.
4. Pour egg mixture all at once and cook slowly.
5. Run spatula around edges, lifting to allow uncooked portion to flow underneath.
6. When mixture is set, fold in half.
7. Cut into pie-shaped wedges.
8. Top each serving with 2 tbsp ketchup mixture.
