Indian Egg Curry Recipe

Serves 4

Ingredients:

  • 2 tbsp curry powder
  • 1 cup onion, finely chopped
  • 2 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 8 hard cooked eggs, chopped
  • 4 toasted english muffins
  • Fresh cilantro or parsley, chopped


Instructions:

1. Saute onion in butter until soft.
2. Stir in curry and flour and heat an additional 2 mins.
3. Slowly add the milk, stirring constantly as sauce thickens.
4. Add chopped eggs and heat thru.
5. Pour over muffins, garnish with parsley or cilantro and serve.
