Indian Egg Curry Recipe
Serves 4 Ingredients: 2 tbsp curry powder
1 cup onion, finely chopped
2 tbsp butter
1 tbsp flour
1 cup milk
8 hard cooked eggs, chopped
4 toasted english muffins
Fresh cilantro or parsley, chopped
Instructions: 1. Saute onion in butter until soft.
2. Stir in curry and flour and heat an additional 2 mins.
3. Slowly add the milk, stirring constantly as sauce thickens.
4. Add chopped eggs and heat thru.
5. Pour over muffins, garnish with parsley or cilantro and serve.
