Hearty Egg Scramble Recipe

Serves 6

Ingredients:

  • 1/3 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/4 cup butter or margarine
  • 2 medium potatoes, peeled, cooked and
  • 1 1/2 cups julienned fully cooked ham
  • 6 eggs
  • 2 tbsp water
  • 1 dash pepper


Instructions:

1. In a large skillet, cook onion and green pepper in butter until crisp-tender.
2. Add potatoes and ham; cook and stir for 5 minutes.
3. In a bowl, beat eggs, water and pepper; pour over ham mixture.
4. Cook over low heat, stirring constantly, until eggs are set.
