Foamy Omelette Recipe
Serves 4 Ingredients: 4 eggs
Pinch of pepper
1/2 tsp salt
4 tbsp milk
1 tbsp butter
Instructions: 1. Beat yolks of eggs; add seasonings and milk.
2. Beat whites until stiff, but not dry.
3. Place skillet on large burner, add butter, set to medium-high heat.
4. Just as soon as butter is melted, lower to low heat.
5. Have bottom and sides of skillet well greased.
6. Fold the stiffly beaten egg whites into yolk mixture.
7. By this time, the pan should be very hot.
8. Pour in omelette, spread evenly, and cook slowly until omelette is set.
9. Then, lace omelette in oven, which must be preheated to 375 F to dry slightly on top.
10. Turn out and serve at once.
11. Finely minced ham, rated cheese or finely chopped parsley may be folded into mixture, f desired.
