Farmer's Breakfast Recipe

Serves 6


  • 3 tbsp butter
  • 3 medium potatoes, peeled and thinly
  • Sliced
  • 4 green onions, sliced
  • 1/2 sweet green pepper, diced
  • 2 cup diced ham
  • Salt and pepper to taste
  • 4 large eggs, beaten
  • 4 oz —heddar cheese, shredded


1. In a frying pan, melt butter over medium heat.
2. Saute vegetables, ham, and seasonings for 3 minutes.
3. Cover, Ůook over low heat until the potatoes are tender, about 30 minutes.
4. Pour eggs over vegetables.
5. Do not stir.
6. Cover and cook until eggs are set, about 10 minutes.
7. Sprinkle with cheese.
8. Heat only until the cheese melts.
9. Cut into wedges and serve.
