Broccoli Omelet Recipe
Instructions:1. In a large frying pan with heatproof handle, heat the oil over medium heat.
2. Saute the onions in the oil for 5 minutes, or until soft.
3. Add the brocoli and herbs, saute for a few minutes.
4. In a small bowl, whisk together the eggs and cottage cheese.
5. Pour over broccoli in pan. Stir a few times to blend.
6. Cook for 3-5 minutes.
7. Transfer to the oven and bake at 375 F until the eggs are set, about 15 minutes.
8. Serve immediately.
