Cheese Omelettes a la Suds Recipe
Serves 3 Ingredients: 6 large eggs
1/3 cup beer
1/2 tsp Tabasco pepper sauce
3 tbsp butter
3 tbsp grated Parmesan cheese
Instructions: 1. Beat eggs, beer and Tabasco sauce with a whisk only until blended, not frothy.
2. In an 8 1/2-inch omelette pan over medium heat, melt 1 tablespoon of the butter. The pan is hot enough when a drop of water spatters in it.
3. Pour 1/3 of the egg mixture into the pan.
4. With one hand, move the pan in a back-and-forth motion.
5. With the other hand, using a fork, stir the egg mixture in a circular motion, about seven times.
6. Sprinkle the omelette with a tablespoon of the cheese.
7. Tip the pan and roll the omelette out onto a plate.
8. Repeat twice with the remaining egg mixture.
9. Serve with additional Tabasco sauce, if desired.
