Featherlight Yogurt Pancakes Recipe

Serves 4

Ingredients:

  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 cup plain yogurt
  • 1 1/4 cups milk
  • 2 eggs, slightly beaten
  • 1/4 cup melted butter or margarine


Instructions:

1. Sift together flour, baking powder, soda, sugar, and salt.
2. Combine yogurt, milk, and eggs.
3. Stir in butter.
4. Pour liquids into flour mixture, mixing just until dampened.
5. Pour 1/4 cup batter on hot greased griddle for each pancake. Makes 16 pancakes, about 4 1/2 inches each.
