Desperately Healthy Pancakes Recipe

Serves 36

Ingredients:

  • First Part:
  • 1/2 cup soy flour
  • 1/2 cup whole wheat flour
  • 1/2 cup unbleached all-purpose flour
  • 2 tbsp wheat germ
  • 2 tbsp powdered milk
  • 2 tbsp unprocessed bran
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Grated peel of 1 orange
  • Second Part:
  • 2 eggs, separated
  • 1/2 cup plain yogurt
  • 1/4 cup oil
  • 1 tbsp molasses
  • 1 tbsp honey
  • 1 1/2 cup orange juice


Instructions:

1. Combine the first 10 ingredients.
2. Reserve the egg whites and add the egg yolks and the remaining ingredients to the flour mixture in a food processor, blend well.
3. Beat the egg whites until stiff; fold into the pancake mixture.
4. Cook on a 300 degree griddle, for 2-1/2 minutes on one side and 1 minute on the other.
5. Makes about 36 3-inch cakes.
