Ginger Cheese Muffins Recipe

Makes 16 muffins

Ingredients:

  • 2 cup flour
  • 3 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp ginger
  • 1/4 tsp salt
  • 1 egg, well beaten
  • 1/2 cup milk
  • 1/2 cup molasses
  • 4 tbsp melted shortening
  • 3/4 cup grated cheese


Instructions:

1. Sift flour, measure, and sift with salt, ginger, baking soda, and baking powder.
2. Combine egg, milk, and molasses.
3. Add to dry ingredients, stirring constantly.
4. Beat only until smooth.
5. Add shortening, and fold in grated cheese.
6. Fill well-oiled muffin tins 2/3 full.
7. Bake in hot oven (425 F) 10-15 minutes.
