Cheese Tortellini Salad Recipe
Serves 6 to 8 Ingredients: 1 lb cheese tortellini
2 cups broccoli flowerets
1 1/2 cups carrots, julienned
1 1/2 tbsp thinly-sliced scallions
6 tbsp olive oil
2 1/2 tbsp white wine vinegar
1 tsp Dijon mustard
2 tbsp minced fresh parsley
3/4 tbsp dried basil
1/4 tsp crumbled thyme
1 tsp minced garlic
Salt and freshly ground pepper to taste
Instructions: 1. Cook tortellini to desired consistency. Drain and run under cold water to stop the cooking process.
2. In separate pans, steam broccoli and carrots until tender, yet crisp.
3. Add broccoli, carrots and scallions to tortellini and set aside.
4. When ready to serve, whisk remaining ingredients and pour over salad.
5. This salad is best served at room temperature.
