Whole Wheat Buttermilk Pancakes Recipe

Serves 6

Per Serving (2 Pancakes): 114 g calories, 18 g carbohydrates, 4 g protein, 3 g fat, 246 mg sodium, 1200 mg potassium, 47 mg cholesterol.
Exchange Values: 1 Bread Exchange, 1/2 Fat Exchange.

Ingredients:

  • 1/2 cup whole wheat flour
  • 1/2 cup unbleached white flour
  • 1 tsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1 cup buttermilk or sour milk (1 cup lowfat milk + 1 tbsp vinegar)
  • 2 tbsp vegetable oil



  • Instructions:

    1. Stir together the flours, sugar, baking powder, baking soda and salt.
    2. Beat the egg, milk and oil together.
    3. Add the liquids to the flour mixture and stir just until blended.
    4. Pour the batter onto a greased hot griddle. Makes 12 4-inch pancakes.
    5. Serve with fresh fruit slices, unsweetened applesauce or low-calorie syrup.
