Crunchy Buttermilk Waffle with Strawberry-Banana Sauce Recipe
Makes 6 waffles Ingredients: 1 1/2 cup AM whole wheat flour
2 tsp non-alum baking powder
1/2 tsp ground ginger
2 eggs
1 1/2 cup buttermilk, or 1 cup buttermilk and 1/2 cup water
1/4 cup maple syrup or honey
1/4 cup AM unrefined vegetable oil
1/2 cup finely chopped pecans
Plain yogurt
Strawberry-Banana Sauce:
1 1/2 cup maple syrup
1 cup sliced bananas
2 cups strawberries, hulled and halved
Instructions: Waffle:
1. Combine dry ingredients; stir well.
2. Beat eggs until thick and lemon colored.
3. Add flour mix, buttermilk, syrup and oil.
4. Beat until smooth.
5. Cook on hot, lightly oiled waffle iron, sprinkling the top with chopped pecans before cooking.
6. Serve with topping of the following sauce and plain yogurt.
Strawberry-Banana Sauce:
1. Combine all ingredients in a heavy saucepan.
2. Cook over medium high heat 10 minutes, stirring occasionally, serve hot.
