Rum Pie Recipe
Serves 8 to 10 Ingredients: 1 envelope unflavored gelatin
5 egg yolks
1 cup sugar
1/3 cup dark rum
1 1/2 cup whipping cream
5 cup sugar
1 unsweetened chocolate bar
Crust:
2 1/4 cup graham crackers, crushed very fine
1/2 cup butter, melted
2 tsp sugar
1/2 tsp cinnamon
Instructions: 1. Mix together crust ingredients. Press and chill.
2. Soften gelatin in 1/2 cup cold water.
3. Place in low heat and bring almost to a boil, stirring to dissolve.
4. Beat egg yolks and sugar until very light.
5. Stir gelatin into egg mixture, cool and gradually add rum.
6. Whip cream until it stands in soft peaks, then fold into gelatin mixture.
7. Cool until mixture begins to set, then spoon into crust and chill for 1 hour.
8. Grate unsweetened chocolate and sprinkle on top of the pie.
