No-Bake Ice Cream Pie Recipe
Serves 6 Ingredients: 2 sq unsweetened chocolate
2/3 cup sifted, confectioners' sugar
2 tablesp butter or margarine
1 1/2 cups snipped coconut
2 tablesp hot milk or water
1 to 2 pints ice cream
Instructions: 1. Grease 8" pie plate.
2. In double boiler, melt chocolate and butter; stir to blend.
3. Combine milk and sugar; stir into chocolate mixture.
4. Add coconut mix well.
5. Press to bottom and sides of pie plate.
6. Refrigerate, to make firm.
7. Fill with ice cream.
8. Wrap and freeze.
12. To serve, first let stand 15 min.
Coconut Crust Pie:
1. Spread 2 tablespoons butter or margarine evenly in 8" pie plate.
2. Pat 1 1/2 cups shredded coconut evenly into butter.
3. Bake at 350F 12 to 15 min, or until crisp and golden brown.
4. Cool.
5. Fill with ice cream and freeze or serve, as above.
