Mandelbrot with Chocolate Chips Recipe
Makes 36 cookies Ingredients: 3 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup and 1 tbsp vegetable oil, divided
1 cup sugar
3 large eggs
1 cup pecans, finely chopped
4 oz semisweet chocolate chips
5 tbsp sugar
1 tbsp ground cinnamon
Instructions: 1. These cookies freeze well.
2. Preheat oven to 375 F.
3. Grease 2 baking sheets.
4. Mix flour, baking powder and salt in medium bowl.
5. Beat oil, 1 cup sugar and eggs in large bowl.
6. Gradually add 2 cups flour mixture, beating constantly.
7. Fold in pecans and chocolate chips.
8. Add remaining flour and mix well.
9. Lightly flour your hands and divide dough into fourths.
10. Transfer to baking sheets.
11. Shape into flat loaves about 3 inches wide and about 3/4 inch high.
12. Combine remaining sugar and cinnamon in small bowl and sprinkle evenly over each loaf.
13. Bake for 20 minutes.
14. Cut each loaf into 1/2-inch slices.
15. Turn slices cut side up and continue baking until toasted and golden, about 15 minutes.
16. Cool completely and store in airtight containers.
