Henry Ford's Chocolate Chip Soybean Cookies Recipe
Makes 120 cookies
Nutritional Analysis per Cookie: Calories 92, Fat 2.5g, Saturated fat 0.3g, Carbohydrate 11g, Protein 1.4g, Cholesterol 7mg, Sodium 74mg.
Ingredients: 3 cup light brown sugar
1 cup soy margarine
4 large eggs
3 cup cake or all-purpose flour
1 cup soy flour
1 tsp salt
2 tsp baking soda
2 tbsp milk
1 tsp vanilla
2 cup crushed soybean nuts (roasted, unsalted)
4 cup semi-sweet chocolate chips
Instructions: 1. Preheat oven to 350 F.
2. In large mixing bowl, cream brown sugar and margarine with electric mixer.
3. Beat for 2 minutes.
4. Add eggs one at a time and cream until smooth consistency.
5. Combine dry ingredients and add to mixture.
6. Add milk and vanilla.
7. Stir in soybeans and chocolate chips.
8. Chill batter, if desired.
9. Spray baking sheets with non-stick vegetable coating.
10. Drop cookie batter onto sheets with a teaspoon.
11. Bake for 8-10 minutes.
