Butterscotch Rolled Cookies Recipe

Makes 3 dozen

Ingredients:

  • 1 cup brown sugar
  • 1/2 tsp salt
  • 1/2 cup butter, softened
  • 1 egg
  • 1/2 tsp vanilla
  • 1 3/4 cup flour, sifted
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon
  • 1 1/2 cup confectioner's sugar
  • 1 egg white, slightly beaten
  • 1 tbsp butter, melted
  • 1/8 tsp salt
  • 1/2 tsp vanilla
  • Food coloring, (optional)


Instructions:

1. Mix sugar, salt and butter thoroughly.
2. Add egg and vanilla and beat till fluffy.
3. Sift flour, baking powder, soda and cinnamon and add to mixture.
4. Chill well, several hours, or overnight.
5. Mix the glaze ingredients together until smooth.
6. Roll the dough out until it is about 1/8 inch thick.
7. Cut into fancy shapes and bake on ungreased cookie sheet for 8-10 minutes at 350 degrees Let cool and glaze.
