Brown Sugar Cornbread Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 1/2 cups cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 and 1/2 cup dark brown sugar, packed, divided
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • Egg, beaten
  • 1/4 cup melted butter or margarine


Instructions:

1. Mix together cornmeal, flour, sugar, baking powder and salt.
2. Combine milk, egg, and melted butter.
3. Add to cornmeal mixture.
4. Stir to mix just until moist.
5. Fill 12 greased muffin pans 2/3 full.
6. Bake in 425 F oven for 20 minutes until muffins are golden brown.
