Bran Cereal Muffins Recipe

Makes 12 muffins

Calories per muffin: about 135 calories

Ingredients:

  • 1 cup whole bran cereal
  • 1 cup milk
  • 1 egg
  • 1/4 cup oil
  • 1/4 cup honey
  • 1 1/4 cup whole wheat flour, unsifted
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt


Instructions:

1. Preheat oven to 400 F (hot). Grease muffin tins.
2. Stir bran cereal and milk together in a bowl.
3. Let stand a minute or two.
4. Add egg, oil, and honey. Beat well.
5. Stir remaining ingredients together until well mixed.
6. Add to liquid mixture and stir only until mixed.
7. Put into muffin tins.
8. Bake about 20 to 25 minutes or until lightly browned.
