Vegetable Bean Soup Recipe
Serves 6 Ingredients: 1 pk Knoor vegetable soup mix
4 1/2 cups water
1 11 1/2-oz can vegetable juice
1 vegetarian vegetable bouillon cube (or 2 beef bouillon cubes)
1/3 cup pasta flakes
1 lb frozen soup vegetables
1/2 tsp celery seed
1 tbsp dried onion flakes
1 can chickpeas, drained
Dash of Tabasco, or to taste
Pepper and salt, to taste
Instructions: 1. In 3-quart sauce pan, add water, vegetable juice, soup mix, and bouillon cube, bring to boil.
2. Add pasta flakes, dried onions, celery seed, and frozen vegetables, lower heat and simmer slowly for 10 minutes.
3. Add drained chickpeas and tabasco, pepper and salt to taste, heat and serve.
4. For non-vegetarian soup, can add left over beef or chicken if desired.
