Irish Coffee Muffins Recipe

Makes 12 muffins

Ingredients:

  • 2 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1/3 cup butter, melted
  • 1/2 cup heavy cream, unwhipped
  • 1/4 cup Irish whiskey
  • 1/4 cup coffee liqueur

    • Instructions:

    1. Preheat oven to 400 F.
    2. Sift the first 4 ingredients together.
    3. Stir in remaining ingredients, until moistened.
    4. Fill paper-lined muffin tins full, and bake for approximately 20 minutes.
