Ice Cream Muffins Recipe

Makes 18 muffins

Ingredients:

  • 1 1/2 cups Pillsbury self-rising flour, or regular flour and 1 tbsp baking powder and 1 tsp salt
  • 2 cups very soft vanilla ice cream
  • 1 egg
  • 2 tbsp oil


  • Instructions:

    1. Measure flour and ice cream into mixing bowl.
    2. Mix only until dry ingredients are moistened.
    3. Fill well greased muffin cups 3/4 full.
    4. Bake at 450 F for 20 to 25 minutes until golden brown.
