Diabetic Popovers Recipe

Makes 18 popovers

Ingredients:

  • 1 cup flour
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup skim milk


  • Instructions:

    1. Sift flour and salt together; set aside.
    2. Beat eggs and skim milk; add to flour.
    3. Beat until smooth and creamy.
    4. Pour into heated greased muffin tins, filling half full or less.
    5. Bake at 375 F for 50 minutes, or until popovers are golden brown and sound hollow. Do not open oven for first 40 minutes!
