Diabetic Popovers Recipe
Makes 18 popovers Ingredients: 1 cup flour
1/2 tsp salt
2 eggs
1 cup skim milk
Instructions: 1. Sift flour and salt together; set aside.
2. Beat eggs and skim milk; add to flour.
3. Beat until smooth and creamy.
4. Pour into heated greased muffin tins, filling half full or less.
5. Bake at 375 F for 50 minutes, or until popovers are golden brown and sound hollow. Do not open oven for first 40 minutes!
